Introduction (Disodium Phosphate CAS No.:7558-79-4)
Disodium hydrogen phosphate,white powder or granular; relative density 1.86g/cm3; Soluble in water and insoluble in ethanol; If its aqueous solution is heated together with diluted inorganic acid, it will be hydrolyzed into phosphate; It is hygroscopic, and when absorbing humidity,it will become into a product with hexa-hydrates; If it is heated at a temperature above 220ºC, it will be decomposed into sodiummeta phosphate.

1.In foods,Disodium Phosphate is used to adjust pH. Its presence prevents coagulation in the preparation of condensed milk. Similarly, Disodium Phosphate is used as an anti-caking additive in powdered products. Disodium Phosphate is used in desserts and puddings, e.g. Cream of Wheat to quicken cook time, and Jell-O Instant Pudding for thickening.
2.In water treatment, Disodium Phosphate retards calcium scale formation. Disodium Phosphate is also found in some detergents and cleaning agents.
