What is Sodium Ascorbate?
Sodium ascorbate is an organic substance, the chemical formula is C6H7O6Na, white to yellowish white crystalline powder or particles, odorless, slightly salty taste. Decomposition temperature 218ºC, dry state is more stable, the light will deepen the color, moisture absorption and slow oxidation decomposition in aqueous solution. It is more soluble in water (62g/100mL) than ascorbic acid, and the pH of 10% aqueous solution is about 7.5.
Sodium ascorbate is a white or slightly yellow crystal or crystalline powder; Odorless; In the air is more stable, light color gradually dark. This product is easily soluble in water, slightly soluble in ethanol, insoluble in chloroform or ether. The pH value of 2% water solution was 6.5-8.0. Application of Sodium Ascorbate:
1. It can be used as an antioxidant in meat and other foods.
2. As a nutritional fortifier for food, it can also be used as a color protector and antioxidant.
3. Nutritional supplements; Antioxidant; Color protectant. The use of ascorbic acid is essentially the same. The physiological function of 1g of this product is equivalent to 0.9gL of -ascorbic acid.
